What is special about damascus knives?
The knife blade makes all the difference. Several layers of hard and soft steel are forged (""folded"") into a single piece of Damascus steel, which is later used to create the blade of the Damascus knife. The challenge in blade making is to find the perfect compromise between blade hardness and elasticity. Hard steel can be ground very sharp and retains its sharpness for a long time, but is brittle and therefore breaks easily. Soft steel, in turn, is very elastic, but quickly loses its sharpness.
The combination of hard and soft steel results in a composite steel that combines the advantages of both types of steel and is ideal for making knife blades. The manufacturing process shows up on the finished blade after polishing or etching as a distinctive, wavy Damascus steel grain.
The name Damascus is derived from the Syrian city of Damascus. The blacksmiths of the Middle East are credited with the technique of folding steel. However, this particular manufacturing process was also perfected in Japan many centuries ago. Japanese knife smiths still enjoy an excellent reputation today and are among the best in their guild.
Damastmesser aus Fernost - das japanische Santokumesser

Das Damastmesser liegt durch die ausgetüftelte Formgebung hervorragend in der Hand, egal ob ein Rechts- oder Linkshänder das Kochmesser führt. Außerdem lässt sich bereits Geschnittenes unkompliziert von der Klingenfläche in Topf oder Pfanne befördern.
Das Santokumesser als bekanntester Vertreter der Damastmesser ist ein echter Alleskönner und schneidet mit seiner sehr scharfen Klinge mühelos durch Fleisch, Fisch und Gemüse. Damastmesser reinigen und pflegen

Sharpening a Damascus Knife
.With frequent use, the blade may need to be resharpened after some time. However, a conventional sharpening steel is not suitable for this purpose. For optimal sharpening of the damask blade, please use a ceramic sharpener or a sharpening stone.
